Restaurant is owned by Raul and
Carol Oliveros, along with chefs,
Diego, Moises and Jesus Cruz. The
owners and staff at Marola’s
bring extensive experience in preparing
and serving wonderful Italian cuisine
to their customers. They have over
89 years of combined experience
in providing legendary Italian dishes
cooked with great skill.
Raul Oliveros, has been cooking
for South Florida for the past 28
years from Key West to Orlando.
He learned the art of cooking at
a young age, by working with several
professional European chefs in New
York, and he soon became a 4 star
chef. Owner/Chef Diego Cruz has
been cooking in South Florida since
1985. In 1989, Diego began working
as a Sous Chef for Raul Oliveros
at Capriccio's Italian Restaurant.
When the restaurant was sold in
1991, Diego became the head chef.
Raul and Carol Oliveros opened Fra
Diavolo Italian Restaurant in Lauderhill,
Moises and Jesus Cruz began working
with their brother, Diego, at Capriccio’s
and quickly mastered the art of
Italian cooking. In 1999, Diego
joined the team at Fra Diavolo;
and when Raul retired in 2003, Diego
became the head chef.
Carol and Diego purchased Marola’s
Restaurant in May of 2006. Moises
and Jesus were invited to become
co-owners/chefs and they accepted
without hesitation. Carol plays
a key role as the owner/manager,
with nearly 30 years of restaurant
management experience. Our seasoned
chefs prepare a beautiful array
of delicious dishes; together with
a comfortable, warm and friendly
atmosphere, you are assured of a
truly enjoyable dining experience.
